Allam Pachadi(Ginger Chutney):
Ingredients Needed for Allam Pachadi:
- Ginger – 60 gms
- Tamarind – 125 gms
- Dry Red Chilli – 25 gms
- Jaggary – 60 gms (may take less if you want it spicy)
- Salt enough to taste
- Channa dal – 1/2 tsp
- Sesame Seeds – 1/2 tsp
- Urad Dal – 1/2 tsp
- Curry One bunch leaves few
Procedure for Allam Pachadi
1) First of all Wash and soak tamarind in water for tamarind juice. Then add grated jaggary to the tamarind.
2)Wash the ginger and peel out the skin,cut into small pieces.
3)Heat the pan with 2 tsp oil, saute the ginger till it turns colour, and fry red chilies also.
4)Then in mixer, take ginger, red chilies, tamarind jaggary mix along with salt and grind all of them to a fine paste No need to add water.
5)Heat the remaining oil and add the tempering ingredients and pour over the chutney.
lIt is always best when allam pachadi is served with breaskfast menu likePesarattu,idli this makes a good side dish for Dosa as well.
